It’s amazing how sweet things can taste when you remove sugar from your diet. Back in 2014 I started following a Paleo diet, I cut dairy, grains, gluten, caffeine and anything processed out of my diet. I was so strict for the first year and the effect it had on my insulin and blood sugar control was incredible. I remember after a few weeks of eating Paleo having one square of 85% chocolate and it tasting so sweet. Almost too sweet.
So, I started making my own granola and my own trail mix. Both savoury and a “sweet” version. Since then, I haven’t been quite so strict, I got married, moved out of London and had a baby. But, I, of course, still live with type one diabetes day in day out and there is no escaping it so keeping my carb and sugar intake as low as possible is important to me.
This trail mix is very very low in carbs and is my go to snack. I have one pack in my handbag at all times. There are toasted seeds, toasted coconut flakes, cacao nibs, 1/4 of a teaspoon of maple syrup and the chocolate which is tempered 95% homemade cacao.
Best enjoyed straight from the resealable pack, on top of yoghurt, homemade chocolate mousse, or with a little homemade almond milk. Perfect for popping in to your bag and eating on the go.
