Perfect Brunch Frittata

We had a lovely surprise this weekend when my brother and his girlfriend called to say they were popping over for brunch, so as they were on their way over I hopped on my bike and headed to Barnes Farmers Market where I picked up a watermelon, some fresh vegetables, eggs and a chorizo sausage with the aim of making a frittata. Frittata is one of the easiest and quickest dishes to make and it never fails to impress. It’s a dish that can be served on its own or with any side salad accompaniment. It’s also as good cold as it is hot which makes for perfect picnic or lunch box food.

What you need:
To serve 8

*6 eggs
*2 spring onions
*1 handful basil
*6-8 baby tomato
*3 inch chorizo, chopped *OPTIONAL
*1tsp sage
*1/2 tsp salt
*1/2 tsp pepper
*1 tbsp pumpkin seeds

Directions:

  • Preheat oven to 180°c
  • Chop up basil, chorizo, tomatoes and spring onions
  • Combine egg, pumpkin seeds, salt, pepper, sage and all the vegetable and chorizo mix
  • Pour in to a greased baking dish and bake in oven for 20 minutes
  • Serve immediately or allow to cool and place in the fridge

Suitable for: Gluten-Free, Grain-Free, Dairy-Free, Paleo, Vegetarian (without chorizo addition)
